Now here is a healthy burger packed with veggies and nutrients.
Avocado spread, grilled Red Bell Peppers and Zucchini, topped with Spinach… this Chickpea and Oats Burger is a vegetarian delight!
This recipe came to mind as I was in the kitchen trying to figure out what to do with my ready-made chickpeas, (read Using Raw Legumes at the end of the recipe to pre-make your chickpeas).
I wanted something filling and healthy, and because this was a cooked burger, I thought what better way to top it off than with grilled veggies *yum*
I included some Rolled Oats, for added fiber and to aid in digestion *thumbs up*
Combining these ingredients with little to no seasoning, and grilling the veggies enhance the flavor of this Chickpea and Oats Burger, making this recipe a favorite on my list!
In the background of the image, are cut up Sweet Potato Fries. These can be prepared and made like my Roasted Potatoes recipe, subbing Sweet Potato, cut in slices.
Using Raw Legumes
Soak for at least 24 hours
Drain, rinse and boil to desired tenderness
Store in a lightly sealed container
Fill container with cold water, and keep in refrigerator for up to a week
