Coconut Crusted Salmon with Mango Salsa

I remember having coconut crusted salmon while on vacation in Mexico and the flavors were delish!

Sticking with this vacation inspired dish, I whipped up a quick mango salsa with ingredients I had on hand, and sauteed some garlic spinach, topping it off with pine nuts *yum*

This meal is light and comfortably filling, with all the proper nutrients you need for a perfect lunch or dinner!
